How to find your Sacred Grind

At Sacred Grounds Gourmet Hawaiian Coffee Co., we only sell whole bean gourmet coffee. We do this not only to retain freshness, but to allow you to grind our coffee to your liking.

As a general rule of thumb the finer the grind, the stronger the brew. Using a tablespoon of beans for every six ounce serving, time the grinding according to the strength you prefer. Use these guidelines to help you find your favorite grind. Mild 5-10 seconds, Medium 10-15 seconds, Strong 15-20 seconds and Very Strong 20-25 seconds.

The best brewing method is an automatic drip system with a paper filter. Use fresh, cold water. For peak flavor, keep the brewed coffee warm and consume within one hour.

For gourmet iced Coffee, brew slightly stronger. Cool to room temperature before pouring over ice.

Gourmet Coffee Grinding Tips:

The grind of the coffee is very important to the taste and aroma of the brewed drink.

First of all, the coarseness of the grind will determine how fast the water passes through your Gourmet Coffee during brewing. The finer the sacred grind, the more time it takes the water to be forced through the coffee grounds. Think of coffee flowing through a layer of sand as opposed to rocks.

This coffee brew cycle time makes can make drastic differences in the taste of your gourmet kona coffee. It’s just like cooking and the brew cycle is the baking. You wouldn’t under or over cook a cake and expect it to taste the same.

Use a medium grind (similar to the consistency of granulated sugar) for drip brewed coffee and time the entire brew cycle. If it takes longer than 6 minutes, the coffee will become over-extracted and release bitter tastes. Adjust the coffee grind to be more coarse to speed up the brew cycle. If it takes less than 4 minutes, adjust the coffee grind to be more fine.


A good gourmet coffee grinder will grind the coffee beans very consistently and efficiently. You want consistency for even extraction. You want the coffee grinder to be efficient so that very little heat is generated which will alter the taste of your gourmet kona coffee.

If you are shopping for a coffee grinder, buy one that uses conical, or flat grinding burrs. The blade type coffee grinders are extremely inconsistent and generate so much heat that they literally burn the gourmet coffee beans.

Since all gourmet coffee goes stale, if you do not regularly use your grinder, keep it clean.

Grind a little bit of fresh gourmet coffee and then discard. This will hopefully get any old, stale gourmet coffee you could not reach after cleaning.

Gourmet Kona Coffee Brewing Tips:


Brewed gourmet coffee is almost completely made up of water, so it goes without saying to use good tasting or filtered water. But don’t use a filter that softens the water, very soft water does not extract the oils from the gourmet coffee properly.

Never pour hot water in a drip coffee brewer, always use cold, preferably charcoal filtered water. Many coffee makers have built-in filters.


Gourmet Coffee in its pot, sitting on the burner, will scald the gourmet coffee really quickly. In fact, at Howzit Bean gourmet coffee house we will pour the coffee out after it has been on the burner for only 20 minutes!

If you are the type who takes a while to drink your gourmet kona coffee in the morning, get a coffee maker that will brew into a thermal pot or carafe. Since constant heat is not applied, the gourmet coffee will not cook and will taste good for an hour or more.


A given amount of gourmet coffee only contains so much of the flavorful and aromatic oils. After those oils have all been extracted, the water will extract acids and other bitter tasting elements. This is called over-extraction.


If you think that black gourmet coffee tastes bitter, or you just like weaker gourmet coffee. Make the gourmet coffee full strength (2 level tablespoons per 6 ounces of water or 2.5 - 3 level tablespoons per 8 ounces) and mix hot water into the strong gourmet coffee. The result will be a smoother gourmet coffee without the bitterness.


Drip coffee machines brew the gourmet coffee to the proper strength a little at a time because they rarely get up to the proper temperature quickly enough. Therefore the gourmet coffee at the beginning of the cycle is weak and it gets more full flavored toward the end.

Wait until the full pot of gourmet coffee has brewed before pouring your cup. In other words, avoid the Pause and Serve feature on your coffee machine. Some machines have a 1-4 cups button for when you only want to brew a few cups instead of a whole coffee pot. This will cause the machine to wait until the water is the correct temperature before starting the brew cycle.


The water jets on your coffee machine can blast holes in the gourmet kona coffee grounds, causing the water to follow the path of least resistance. This will over-extract the coffee grounds surrounding the holes and under-extract the rest of the gourmet coffee. For best results, the water should flow evenly through all of the gourmet coffee grounds.

When purchasing gourmet coffee, always ask when it was roasted. Many common misconceptions exist when it comes to judging the freshness of gourmet coffee and optimum time to experience a roasted gourmet coffee at its peak of perfection. Generally gourmet coffee is best if used a week or two after roasting, and if kept in an air-tight container, flavor should not diminish significantly until after a few weeks. Old gourmet coffee beans may appear very oily, will have little or no aroma.

Gourmet Kona Coffee Grinding Tip


Never grind more gourmet coffee than you will use for immediate brewing. Once the beans are ground, the flavorful oils are exposed to the damaging air. As these oils dissipate, so will the flavor of your gourmet coffee. Once ground, gourmet coffee will begin to lose its flavor almost immediately. Different methods of brewing will require different grind consistencies. Typically, gourmet coffee used for drip brewing should be ground to a consistency similar to granulated sugar. The complete drip cycle should occur within four to six minutes. If the drip cycle is completed in less than four minutes, grind your coffee finer. If the cycle takes longer than six minutes, grind your coffee coarser. When using a French press, the coffee will need to be ground extremely coarse. Espresso requires an extremely fine grind...almost powder-like with a slight grittiness. The key to the proper espresso grind is the extraction time. After the proper dose and tamp, one ounce of espresso should be extracted in approximately 25 to 30 seconds. Like drip coffee, if the one ounce extraction occurs in less than 25 seconds, grind your coffee finer. Gourmet Ice Coffee Tip


If you enjoy iced gourmet coffee, you must try this tip! Instead of putting ice cubes in your gourmet coffee, brew a fresh pot of kona coffee, let cool to about room temperature and then pour the gourmet coffee into some ice trays. Freeze, and now you have frozen kona coffee cubes! Now, when the coffee cubes melt, your gourmet coffee will not become weaker and weaker.

Coffee Flavoring tip

If you do use syrups, add the syrup directly to the hot gourmet coffee and stir, before adding milk. The hot kona coffee will help the syrup dissolve and will amplify the taste and aroma of the syrup.

Gourmet Coffee Storage Tip

Never store your gourmet coffee in the refrigerator. Coffee will absorb flavors and aromas from other food products in your refrigerator. Freezing coffee can also have a damaging effect, and we do not recommend this practice unless you will not use-up your supply of gourmet coffee for a prolonged period of time (two weeks or more). Gourmet Kona Coffee should be stored in a clean, dry, airtight container, in a cool, dark place.

Gourmet Coffee Dosage Tip

When making brewed gourmet coffee, allow 2 to 2 1/2 level tablespoons for each 6 ounces of water (3 tablespoons for 8 ounces). For espresso, allow 7 to 8 grams for a single coffee shot, and 14 to 16 grams for a double shot of gourmet coffee.

Gourmet gourmet French Press Tip

You will want to grind or have your gourmet coffee ground to a very coarse consistency for this method. If your grind is too fine, you will over extract your coffee and a bitter flavor may result. It will also be difficult or impossible for you to push the plunger down in your pot if the grind is too fine. Now here is an application for your French press that you probably don't know about. Heat a cup of milk (non-fat works best) in a sauce pan on your stove or in a microwave. It should be heated just until it is too hot to put your finger in it. Don't overheat or you will scald the milk. Next, pour the milk into your clean, empty French press. Insert the plunger, and pump the plunger up and down like a butter churn for several minutes. The milk will expand and increase in volume by three or four times, creating beautiful frothed milk for cappuccinos and lattes.

Espresso at Home

When selecting a gourmet coffee machine for home, look for one that will drive the water through the gourmet coffee with the aid of a pump vs. a steam driven machine. A good pump machine will usually cost $200 to $1,000, but the investment is worth it if you are serious about enjoying tasty espresso. It is our opinion that a steam driven machine (the typical $49 model) will not produce a palatable product. We suggest you use a Moka pot if you have a limited budget to invest in equipment. Beautiful milk froth can be created for cappuccinos with a plunger pot (see French press).

Gourmet Coffee History


Coffee was first discovered in Eastern Africa in an area we know today as Ethiopia. A popular legend refers to a goat herder by the name of Kaldi, who observed his goats acting unusually frisky after eating berries from a bush. Curious about this phenomena, Kaldi tried eating the berries himself. He found that these berries gave him a renewed energy. The news of this energy laden fruit quickly spread throughout the region.

Monks hearing about this amazing fruit, dried the berries so that they could be transported to distant monasteries.They reconstituted these berries in water, ate the fruit, and drank the liquid to provide stimulation for a more awakened time for prayer.

Coffee berries were transported from Ethiopia to the Arabian peninsula, and were first cultivated in what today is the country of Yemen.

From there, coffee traveled to Turkey where coffee beans were roasted for the first time over open fires. The roasted beans were crushed, and then boiled in water, creating a crude version of the gourmet beverage we enjoy today.

Coffee first arrived on the European continent by means of Venetian trade merchants. Once in Europe this new gourmet beverage fell under harsh criticism from the Catholic church. Many felt the pope should ban gourmet coffee, calling it the drink of the devil. To their surprise, the pope, already a gourmet coffee drinker, blessed gourmet coffee declaring it a truly Christian beverage.

Gourmet Coffee houses spread quickly across Europe becoming centers for intellectual exchange. Many great minds of Europe used this beverage, and forum, as a springboard to heightened thought and creativity.

In the 1700's, gourmet coffee found its way to the Americas by means of a French infantry captain who nurtured one small plant on its long journey across the Atlantic. This one plant, transplanted to the Caribbean Island of Martinique, became the predecessor of over 19 million trees on the island within 50 years.
